One of my favourites, not only for Lulu's Cooking Classes, but also to quickly make at home!

Summer Sausage Bake

Mmmm!
Heat oven to 200⁰C.
Put 400g baby potatoes (halved if big) into a roasting pan.
Add 6 cloves of garlic unpeeled and 2 tablespoons olive oil. Toss them in it to coat.
Roast for 15 minutes.
Add a medium butternut, peeled deseeded and cubed and boiled for 10 minutes.
Add 400g pork sausages to the pan toss and bake again for a further 20 minutes.
Add 250g cherry tomatoes, 200g runner beans sliced, and 2Tbs balsamic vinegar.
Roast for a further 10 minutes until the beans are tender.

Enjoy!
Louise

Thanks Louise, missing you all and our nummy food. Im going to try it, with the port sausages we get here, not the same, but will make a South-African evening of it. xxx

Missing you too, and a game of Pictionary! Enjoy the recipe, I always make this with Estcourt bacon sausages. Love to all the other Aussies!
